Quick and Easy Marinated Chicken


Spring is here and if you haven't already, it's time to fire up that grill. One of my favorites is a marinated chicken breast. First you will need a bottle of your favorite Italian salad dressing. I prefer Wishbone as it has a very robust flavor. Then I guess it would be helpful to have some chicken breast also. To get the best flavor you will want to marinate the chicken over night but if you don't have the time and you really need to have chicken, a couple of hours will give you some pretty good flavor. So lets do a recipe:

Boneless, skinless chicken breast          about 2 pounds
Wishbone Italian Dressing                     1-16 ounce bottle
Garlic Powder                                        1 Tbs
Fresh Ground Black Pepper                   to taste
Sea Salt                                                    to taste
Parsley Flakes                                         1 Tbs

Start by washing your chicken in cold water because it's the safe thing to do. Next season the chicken with the garlic, pepper, sea salt and parsley. I like plenty of garlic and pepper and usually I don't use any salt but I know a lot of you out there must have that salt so if you do use it use sea salt, it's better for you. Next coat the chicken with the salad dressing. Usually about half of the bottle will be enough. Save the rest for a salad or maybe for the next time you want chicken. Put all this in a stainless bowl or some Tupperware or even a large zip lock bag and put in the fridge overnight. Now tomorrow you will be ready to grill. Get your grill fired up so that you have some medium heat. Too hot and it's going to burn for you real quick and it won't be done in the middle. Times will vary depending on the thickness of the chicken breast. Always start the chicken with the side that had skin down on the grill. This is the side you will want to present when you plate up your chicken. Usually about 8-10 minutes on each side will get the chicken breast done. Again there are alot of variables, how hot the grill is and the thickness of the chicken so use these time frames as a guide line and use your own judgement for the finished product. If you are unsure turn the chicken breast over and make a small slit in the thicker part to see for yourself. If you still have some pink going on you need to cook it a little longer. Serve your chicken with a nice green salad and maybe some pasta Alfredo or maybe a roasted potato or some brown rice and a nice green vegetable. What ever you may choose I'm sure the chicken will go with it very well. Give it a try and let me know what you think. This recipe will feed 4 easily and have some leftovers for the next day. Enjoy.
